How to make
Grind the biscuits with the softened butter until you get a homogeneous mixture. Pour the mixture into a prepare form with removable sides and press very well.
Beat the cream cheese with the sugar, add the eggs and vanilla and stir once again to a smooth cream. Pour it over the biscuit base and even it out.
Bake the cheesecake in a preheated 310°F (155 °C) oven for about 25-30 min. If necessary, you can bake for a few more min. The cheesecake needs to have nicely baked edges but be slightly liquid on the inside.
Leave it to cool a little and add the jam. I made it with blueberry jam but you can use any kind you like. A truly quick to make dessert, the result is amazing.
Leave the cooled cheesecake in the fridge overnight. Then carefully take it out of the form and serve.
