How to make
Heat the sugar, butter and rum in a small pot until the sugar melts.
Cut the mangoes lengthwise, removing the pit and rind. Peel the bananas and cut them lengthwise.
Smear the mangoes, bananas and pineapple with the syrup.
Heat a grill pan and crisp until golden - about 3 min. on each side. Sprinkle with the coconut flakes.
