How to make
First boil the water and sugar for the syrup. After boiling, add a few drops of lemon juice. Reduce the heat. Boil for 20 minutes on low heat and then let it cool.
Split 3 1/3 tbsp (50 g) of the butter into small clumps and allow to sit at room temperature to soften. Once the cubes become tender, add 1 tablespoon of molasses over them.
Stir until you get a homogeneous mixture, then leave it aside. Split the kadaif - to become like noodles. Melt the remaining 2/5 cup (100 g) in a small pot and pour them over the kadaif. Smear the tray with the mixture of butter and molasses very nicely.
Sprinkle kadaif along the bottom of the tray until it's covered and press it down with your hands so it sets firmly. Sprinkle it with crumbled feta cheese, sprinkle more kadaif to cover the feta cheese and press again. Bake the dessert in a low to moderate oven on both sides for 6-7 minutes.
Once one side is ready, invert it into another tray. Smear that tray generously with the mixture of butter and molasses as well and bake that side. Once you take the dessert out from the oven, pour the cold syrup over it, while still warm.
Optionally you can decorate the top. It goes perfectly with Turkish tea.
