Make the syrup ahead of time from the ingredients listed, flavor with vanilla and lemon zest at the end.
Butter the bottom and sides of a medium pan very well. Crumble half the kadaif and press it well to the bottom of the pan so it sits firmly.
On top, lay on small pieces of some of the mozzarella or other type of young, fresh cheese. Add a little butter and press in the rest of the crumbled kadaif - try to cover the mozzarella well and press on it.
Heat the stove on low and put the pan on it. Once it gains a golden crisp on top, use a plate or other pan to flip it over so it cooks on the other side as well. Before you put it in the pan again, clean and smear it with butter anew.
Pour the cooled sugar syrup over the kanafeh. You can sprinkle crumbled nuts on top - walnuts, pistachios.
