Ingredients

  • ciabatta - 4
  • carrots - 1
  • eggplants - 1
  • onions - 1 head
  • avocados - 2
  • tomatoes - 12, dried
  • for the baba ganoush
  • eggplants - 2
  • tahini - 2 tbsp, sesame
  • garlic - 2 cloves
  • olive oil - 1 2/3 tbsp (25 ml)
  • lemon juice - of 1/2 a lemon
  • parsley - 1 bunch

How to make

Soak the dried tomatoes in warm water. Wash and clean the onions, carrot and eggplant. Cut the onion into circles and the other 2 products into thin slices. Leave everything to bake in a lightly oiled pan.

While the veggies are cooking, get to work on preparing the baba ganoush. Bake the 2 eggplants in an oven or party grill. Peel them and put them in a blender. Add the other listed ingredients and blend until you get a smooth mixture.

Next, it's time to stuff the sandwiches. Cut the ciabatta in half and smear them with blended avocado on one side. On the other, put the baba ganoush. Put baked veggies and dried tomatoes in the middle. Serve the sandwiches in suitable plates.
