How to make
Parboil the pork tripe in boiling water, scrape it carefully with a knife on the inside and out, wash it very thoroughly and pour cold water over it. Boil about 1 hour.
Cut up the pork tripe, salt the broth from its boiling and boil another 20 min.
Next, to this add the heated oil mixed with the paprika, black pepper to taste and the milk.
Upon serving, put some tripe in a bowl and pour the hot broth over it. Season with vinegar and crushed garlic.
