How to make
Combine the water, rice and cinnamon in a deep pot. Bring to a boil, lower the heat and boil 10 min. or until the water is absorbed.
Add the heated milk and continue to boil on low heat for 15-20 min., stirring from time to time.
Add the sugar and vanilla and continue stirring another 3-5 min., until the sugar dissolves.
Distribute the cream into serving bowls, sprinkle with a little cinnamon if desired.
Serve the atole warm or cold, as a dessert or snack.
