Ingredients

  • gelatin - 1 1/2 tsp, powdered
  • water - 4 tbsp
  • sugar - 2 tbsp
  • red wine - 2/3 cup (150 ml)
  • wild berries - 1 cup (250 g), frozen
  • for the cream topping
  • cream - 2 cups (500 g)
  • cream cheese - 4/5 cup (200 g)
  • lemon zest
  • orange zest
  • eggs - 1
  • sugar - 1/5 cup (60 g)
  • lemon juice - 1 tbsp
  • gelatin - 1 tbsp, powdered
  • water - 3 tbsp

How to make

Prepare a baking form and lay it out with baking paper. Soak the gelatin in water and heat it for 40 seconds in a microwave. Leave it to cool, add the sugar and mix with the red wine.

Pour into the baking form and let it cool. Add the thawed and cleaned wild berries. Leave it to cool.

To make the cream topping, beat the cream, cream cheese, the 2 types of zest. Combine with the egg, sugar and lemon juice and boil in a water bath. Remove from the stove.

Dissolve the gelatin in the water and mix with the other mixture. Pour this onto the fruit jelly and leave the cheesecake in the fridge to cool for several hours.
