How to make
Peel the eggplants and cut them lengthwise, salt and let them sit for awhile.
Then drain them from the bitterness and wash them. Dip each eggplant piece separately in the flour and fry it.
Prepare a stuffing from the feta cheese, some of the eggs and spices. Place it atop half the eggplant pieces and cover with the other eggplants on top.
Dip thus prepared eggplant bureks in flour and the remaining eggs and fry. Serve with yoghurt.
