Ingredients

  • dock - 1.8 lb (800 g) leaves
  • onion - 1
  • carrots - 2
  • chives - 1 bunch
  • oil - 2 tbsp (30 ml)
  • garlic - 3 pcs. cloves
  • tomato puree - 2 tsp.
  • rice - 1/4 cup
  • spearmint - 1 sprig
  • lovage - 1 sprig
  • paprika - 1 tsp.
  • black pepper - 1/3 tsp.
  • Thickener
  • eggs - 2 pcs.
  • yogurt - 3 tbsp.
  • citric acid - 1/4 tsp.

How to make

Put about /2 liters/ of water on the stove to boil with a little salt. Once the water boils, add the cleaned and washed dock. Boil for 3-5 minutes.

Strain the dock and finely chop it. Chop the carrots, onions and garlic cloves finely and add them to the oil with a little water to stew. Add the chives and when the vegetables soften, add the dock, rice, paprika, spearmint, lovage and hot water.

Add the previously washed and cleaned rice. When the rice is cooked, remove the spring soup from the stove and make a thickener.

In a bowl, beat the eggs with the yogurt, black pepper and citric acid and mix until smooth.

Gradually add some of the broth to the dock soup whisk well.

Remove the pot from the heat and add the thickener in a thin stream, while stirring constantly. Salt the dock soup after adding the thickener.
