Ingredients

  • couscous - 9 oz (250 g)
  • tomatoes - 0.9 lb (400 g) diced (from a tin)
  • corn - 9.2 oz (260 g) from a tin
  • red beans - 10 oz (280 g) from a tin
  • avocado - 1
  • peppers - 1 light green
  • onions - 1 large onion, chopped
  • vegetable broth - 1 cube
  • chili peppers - 1 dried
  • honey - 1 tbsp.
  • curry - 1/2 tsp.
  • paprika - 1/2 tsp.
  • lemon juice - from 1/2 lemon
  • cumin - 1/4 tsp.
  • cardamom - 1/4 tsp.
  • cloves - 1/4 tsp.
  • black pepper - 1/4 tsp.
  • olive oil - for cooking

How to make

Finely chop the pepper and onion. Strain the water from the canned beans and corn.

In a deep pot with olive oil, pour the chopped vegetables, corn, beans and the entire tin of tomatoes. Crush the vegetable broth cube on top, add the juice of 1/2 lemon, honey and all the spices.

Pour 2 cups (500 ml) of boiling water, stir and leave it to boil on a medium heat for about 5 minutes. During this time, cut the avocado into pieces.

Turn off the heat and pour the couscous into the pot. Stir well. Remove from the heat, cover with a lid. Leave the couscous to swell for about 5 minutes.

Serve it in bowls and sprinkle with avocado cubes.

The Moroccan couscous with vegetables and avocado is very tasty.

Note: An extremely spicy Arabic style dish. The important thing is to feel more of the spiciness of the chili pepper. To make it even spicier, so that this Arabic spiciness can be tasted even more, I added 1/2 cup pepperoncino.
