Sprinkle the steaks with salt and pepper and fry them in oil until browned and ready. Remove them and put them in a warm place.
To the remainder of the frying oil, add the wine mixed with the lemon and orange juices. Allow the fire to boil off half of this.
Add the grated nutmeg and cream. Pour this resulting sauce over the steaks. Serve with a side of steamed broccoli and cauliflower.
