Ingredients

  • porcini mushrooms - 2.2 lb (1 kg) of fresh mushrooms
  • onions - 1 large
  • garlic - 2 cloves
  • butter - 4 tbsp.
  • chicken broth - 4 cups
  • cream - optional
  • black pepper - to taste
  • parsley - 1 bunch
  • basil - optional

How to make

Clean and cut the mushrooms into bite-sized pieces.

In a large pot, melt the butter.

Add finely chopped onion and garlic.

Cook for about 5 minutes.

Add the mushrooms and cook until stewed.

Pour the stock and bring the mixture to a boiling point.

Let it boil on low heat for about 10 minutes or until fully cooked.

Add cream if desired.

Season with salt and black pepper.

Blend the mushroom soup until smooth.

Serve the Porcini Mushroom Soup while it's warm.

Sprinkle with chopped parsley and basil if desired and enjoy this aromatic porcini mushroom soup.
