How to make
Grease a cake form of about 9″ (23 cm) in diameter and lightly sprinkle it with cocoa. Combine the flour, cocoa, baking soda, baking powder and salt in a bowl. Separately, beat the soft butter with both sugars into a fluffy and smooth cream.
Add in and beat with the egg and the orange peel. Gradually add the dry ingredients and wine to the buttery mixture. When adding the wine, the cake batter might curdle, but this is not a problem. Pour the cake mixture into the form and put it to bake in a preheated 360°F (180 °C) oven.
Baking takes about 35-40 minutes. At the end, you can check the readiness with a toothpick. Let the ready cake cool, invert it into a tray and optionally, pour on couverture chocolate or sprinkle it with a little powdered sugar.
Garnish with fruits of your choosing.
