How to make
Beat the butter, sugar and honey in a bowl into a creamy mixture. Add the eggs one at a time while continuously whipping. Gradually add the sifted flour mixed with the baking powder, vanilla and finally the lemon zest.
Put the mixture into a greased and lightly floured tray. Arrange the halved apricots on top. Put the cake with apricots and honey to bake in a pre-heated 360°F (180 °C) oven for about 50 min.
Optionally, sprinkle the ready fruit cake with powdered sugar and serve chilled.
