  • white onion - 2.2 lb (1 kg)
  • parsley - 1 handful
  • extra virgin olive oil
  • salt - to taste
  • black pepper - to taste
  • anchovies - canned 3.5 oz (100 g) or bacon - 5.3 oz (150 g)

How to make

Peel the onions and boil them in boiling water for about 10 minutes.

Grease a baking tray and arrange the onions side by side, season with salt and black pepper, then cover generously with chopped parsley, if using any.

Drizzle with extra virgin olive oil.

Bake in a preheated oven at 360°F (180°C) for about 1 hour until the onions become golden brown.

If using bacon, slice and sprinkle it over the onions and grill.

For a super gratin effect, increase the temperature to 390°F (200°C) for the last 10 minutes of cooking on grill mode.

The anchovies are placed after removing the roasted onions and decorated with two fillets each.
