How to make
Cut circles out of the puff pastry. Cut half of them with a smaller circle.
Stick the two parts together with beaten egg white. Spread the top with beaten egg yolk and bake in a preheated oven on a tray lined with kitchen paper.
Peel and cut the apples into small pieces. Caramelize them with the butter, sugar and add the fig jam.
Stir until the apple pieces are soft. Sprinkle with cinnamon and lemon peel.
Spread the apple slices over the puff pastries.
The Vol-au-vent with Caramelized Apples are ready.
