How to make
Toast the hazelnuts in a dry pan for 4-5 minutes, stirring constantly. Leave to cool completely. Then grind them in a blender.
In a bowl, mix the rice flour, sugar and grinded nuts. Add the diced butter. Mix until you have moist crumbs.
Add the peanut butter and the beaten egg. Stir the mixture with a spoon.
Line a tray with baking paper or you can use disposable paper molds. Shape the mixture into walnut-sized balls. Place the cookies at a distance from each other.
Bake the healthy cookies in a preheated oven at 360°F (180°C) for about 20 minutes.
Melt 1.8 oz (50 g) of chocolate and a little butter in a water bath and garnish the cookies with the resulting glaze after they have cooled.
