  • flour - 9 oz (250 g) with a high gluten content
  • water - 5 fl oz (150 ml)
  • fresh yeast - 0.35 oz (10 g)
  • salt - 1 tsp.

How to make

Dissolve the yeast with a pinch of sugar in the slightly warmed water. Stir and let it activate.

Sift the flour to the activated yeast and knead a soft and smooth dough. In the process of kneading add the salt.

Form a cylindrical oblong loaf and put it in a rectangular cake tin with a capacity of 1 liter, previously greased with oil or olive oil.

Cover the baking pan with baking paper or aluminum foil and leave it to rise and fill the baking pan.

This bread is steamed, that's the secret to being so soft and not having a crust.

It would be best to have a steamer that fits the bread mold. If you don't have one, you could invent something similar with a large pot of water on which to place a sieve or a large colander of the same diameter and deep enough to fit the bread mold. Place it along with the foil or paper that covers it and cover it with a lid.

Steam the Cotton Bread for 45 minutes, then remove it from the heat and leave it for a few minutes. Remove it from the baking pan and cool it on a wire rack.

Apart from the fact that this way the bread becomes very soft and tasty, it is also attractive in appearance with its milky white color and the absence of a hard covering crust. It is ideal for small children, or people with teeth problems who find it difficult to chew hard bread crust.
