How to make
Cut the onion into thin crescents and the carrots into thin strips.
Pour water into a suitable pot, add sugar, bay leaf, allspice, cloves, black pepper, cinnamon and put it on the stove.
Once boiling, add the carrots and boil for 3 minutes.
Add the onion and vinegar and boil for 1 more minute.
Remove the marinade from the heat and leave it to cool completely.
Remove the carrots and onions from the marinade and spread them over each herring fillet.
At one end of each fish fillet place a piece of roasted pepper.
Roll them up into rolls and pierce with a toothpick.
Arrange the rolled up rolls in a deep dish.
Pour the cooled marinade over the fish rolls, cover with cling film and refrigerate for 12-24 hours.
Before serving, cut the Herring Rollmops into 2-3 parts.
