Ingredients

  • potatoes - 2.2 lb (1 kg)
  • oil
  • onion - 2 onions
  • peppers - 2 pcs. green and red
  • salt
  • black pepper
  • garlic - 1/2 tsp., granules
  • eggs - 6 pcs.
  • tomatoes - 1 pc.
  • mozzarella - 4.4 oz (125 g)
  • cheese - 1.8 oz (50 g)

How to make

Peel the potatoes and cut them into cubes. Stew the onion, green and red pepper in oil for 10 minutes. Add the potatoes.

Season with salt, black pepper and garlic granules and mix.

Transfer into a baking pan. Beat the eggs and pour them over the vegetables. Grate cheese on top - on the ingredients for the vegetable casserole.

Cut the tomato into slices and arrange them on top of the cheese and put a piece of mozzarella between the tomatoes.

Bake the oven-baked vegetables with mozzarella at 390°F (200°C) for 20 minutes.
