How to make
Wash and clean the spinach. Put it in a blender and blend it along with the oil.
Beat the eggs with the sugar. Mix the egg and spinach mixture.
Sift the flour along with the baking powder.
Add it to the liquid ingredients for the spinach cake and mix until smooth. Add the vanilla.
Divide the mixture into two parts and bake in a 8.7″ (22 cm) mold, lining the bottom with baking paper.
Bake at 360°F (180°C), checking for doneness with a wooden stick.
Blend the strawberries together with the sugar.
Dissolve the gelatin according to instructions on the package and add it to the strawberry puree.
Pour into a mold with a smaller diameter and refrigerate until the strawberry mixture has set.
Beat the cream to a thick cream, add the cream cheese. Beat until homogenous.
Assemble the Cream Cake by spreading the base cake layer with the cream.
Cut the second cake layer the same diameter as the strawberry cake.
On top of the base cake layer carefully place the strawberry.
Place the small spinach top and spread again with cream.
Put the festive cake in the refrigerator for about 2-3 hours.
Before serving, garnish the Spinach Cake with Strawberries and Blueberries and fresh mint.
