How to make
Cut the eggplant into medium-thick slices and place them in a bowl of salted water. After about 20-30 minutes, discard the water and wash them with cold water.
In a bowl, mix the flour, breadcrumbs and vegetable seasoning. Roll each piece and arrange them on a tray lined with baking paper and greased with oil.
Pour the remaining oil on top and bake in a heated oven at 390°F (200°C).
Before removing, sprinkle with grated cheese and bake.
