How to make
Separate the egg white from the yolk.
Put the egg whites in a dry bowl with a trickle of lemon and a pinch of salt and beat well.
Mix the flour with the milk, so that there are no lumps. Crumble the blue cheese and add it to them and place in a water bath for 3 minutes at 190°F (90°C) and constant stirring.
Remove the bowl from the water bath and stir for another 2 minutes to lower the temperature.
During this time, turn on to heat the oven initially to 320°F (160°C).
Add to the mixture with the cheese and egg yolk. Beat until perfectly smooth and pour into the egg whites. Mix until homogeneous with smooth movements and care so that the volume does not decrease.
Grease two metal or ceramic bowls and sprinkle with flour.
Spread the white cheese soufflé mixture into them and place the cups in a baking pan with water to cover them almost halfway.
Place in the heated oven and bake for 12-15 minutes, by increasing the temperature to 390°F (200°C) after the 2nd minute.
The soufflés will turn acquire an appetizing color, crinkle and puff up.
When they are ready, leave them for a minute in the turned off oven, then open the door and wait a while before taking them out.
Serve them warm directly in the cups or inverted on a tray, for which you need to run a knife along the edges of the mold.
Decorate to your liking and eat the fluffy festive blue cheese soufflés warm.
