Ingredients

  • spelt flour - 2 cups
  • salt - 1 pinch
  • butter - 3.5 oz (100 g) + for greasing the baking pan
  • goat yogurt - 2/3 cup
  • eggs - 4 pcs.
  • oil - 3 1/3 tbsp (50 ml)
  • spring onions - 3 pcs.
  • dock - 2 bunches
  • goat cheese - 5.3 oz (150 g)
  • black pepper - 1 pinch
  • beans - 0.7 oz (20 g)

How to make

Leave the butter at room temperature to soften.

The spelt flour is poured into a bowl where the dough will be kneaded.

Make a well in the middle and add 1 egg, butter and goat's yogurt.

Knead the dough, put it in a bowl, wrap it with cling film and leave it in the fridge for 30 minutes.

The spring onions are cleaned, washed and finely chopped.

Put them in a wok pan, add the oil and fry for 5 minutes.

The dock is washed and the vein in the middle is removed.

After the onions are fried, the dock is added.

Mix very well and fry for 10 minutes, then pour into a colander to drain.

3 eggs are placed in a bowl, the black pepper is added and everything is mixed very well.

Crumble the goat cheese into small pieces in a separate bowl.

After it has been left in the refrigerator for a while, the dough is rolled out and placed in a buttered quiche tin with a removable bottom.

The beans are placed on top.

Bake the quiche dough for 10 minutes in a preheated oven at 360°F (180°C), then remove from the oven, remove the beans and leave it to cool.

After the base cools down, the strained dock is placed on top.

Pour the eggs over it and sprinkle with the crumbled cheese.
