How to make
Pour cold water over the cleaned spinach and boil it. The water needs to cover the spinach.
Once the liquid has boiled, remove the spinach. Rub it through a sieve and strain the liquid.
Leave it to cool down. Beat the eggs, add the milk and spinach mash. Season with salt.
Stir. Add flour, while stirring constantly, until a pancake batter is obtained.
Heat a suitable pancake pan. Spread the bottom with butter.
Pour the liquid with a ladle and spread it over the bottom of the pan. Bake the pancakes until done on both sides.
Stir the cream. Finely chop the spring onions and olives. Add them to the cream.
Spread the savory pancakes on one side, shape them into a bohcha and tie them with a spring onion leaf.
Garnish with olive, dry parsley and mustard.
The spinach bohcha are ready.
