How to make
Dorayaki - Japanese dish made of two fluffy pancakes stuck together with Anko paste. The filling is made from boiled red beans, which are sweetened with sugar.
In the bowl, using a mixer, beat the eggs with the sugar and honey until white, for about 3 minutes. The honey should be liquid. Dissolve the baking soda in the water and add it to the mixture.
Add the sifted flour and mix, until a homogeneous batter is obtained. Cover the bowl with cling film and leave it for 30 minutes.
Then add 1-3 tbsp. water and stir. The batter should not be too thick, nor too liquid.
Heat the pan and coat it lightly with the oil. An even brown color of the fluffy pancakes can only be achieved when the layer of butter in the pan is as thin as possible.
In the middle of the pan, using a tablespoon, pour the batter to make a pancake with a diameter of about 8 cm. Bake on low heat.
When bubbles appear on the surface of the pancake, immediately flip and fry for about 10-20 seconds. The batter is enough for 8-10 Japanese pancakes.
Stick the pancakes two by two with the Anko paste.
Serve the Dorayaki while they are warm.
