How to make
Rice with mushrooms and parsnips, suitable for a basic vegetarian dish or as rice garnish.
The onions are cleaned, washed and finely chopped.
Put them in a non-stick pan and pour in 100 ml oil.
Fry the onions for 5 minutes.
Put the dried parsnip in a small bowl and pour 50 ml of oil to soak them for 10 minutes.
The rice is washed, until the water becomes clear, then it is left in a colander to drain.
The mushrooms for the rice are cleaned from the stumps, washed and cut into chunks.
Once the onions are fried, the chopped mushrooms are added.
Fry for 10 minutes with prolonged stirring over medium heat, then the rice is added.
The frying lasts 5 minutes and it is removed from the stove.
Pour the mixture into a non-stick baking pan with a lid.
Add the spice for the rice, the soaked parsnip without oil, salt and butter.
Stir very well and pour over 6 cups of hot water.
Bake the rice in the oven for 20 minutes in a preheated oven at 430°F (220°C) under the lid, by stirring several times when baking, then switched off the oven and leave the baking pan in the oven under the lid for another 20 minutes.
This is the most delicious meatless rice!
