How to make
As for a first time, they turned out very well for me.
Put the water, oil and salt on the stove to boil. Once the water has boiled, remove it from the heat. Add the flour a little at a time, by stirring constantly with a wooden spoon. Once a soft dough is obtained, leave it to cool.
Add the eggs one by one and mix the eclair mixture again with a wooden spoon.
We will bake the mini eclairs in a preheated oven at 360°F (180°C).
Lightly grease the baking tray.
With your hands, take a small portion of the resulting dough, make a ball a little bigger than a walnut and place in the tray. Space them apart, because they puffs up a bit when baking. Make all the mini éclairs like this. Put them to bake in the oven, until they're done.
Once they're done, let them cool, cut them through the middle with a knife, without cutting all the way through.
To make the pudding:
For the vanilla pudding, put 1 2/3 cups (400 ml) of milk and sugar on the stove to melt the sugar. The stove is turned on to moderate heat.
Pour the vanilla pudding into a bowl and add 2/5 cup (100 ml) of milk and stir the mixture. Pour the mixture into the milk and stir, until it thickens.
When the pudding is done, take it off the heat and leave it, it will thicken further, but stir it so it doesn't form a crust.
Take a mini eclair and fill with the already prepared vanilla pudding, by using a piping bag or a small spoon.
Sprinkle the cream eclairs with powdered sugar on top.
