How to make
Start off, by preparing the cream first.
In a bowl, beat the egg yolks with the flour and part of the banana juice, until a smooth mixture is obtained.
Put the rest of the juice and granulated sugar on the stove, just before the juice boils, add the yolk mixture, by stirring constantly and after it thickens enough, remove it from the stove and leave it to cool, by covering it with cling film, so that it does not form a crust on the surface.
Beat the soft butter with the powdered sugar, until a fluffy mixture is obtained.
While the cream is cooling, prepare the eclairs. Pour the water and oil into a suitable cookware and put it on the stove, as soon as it boils, add the flour all at once and start stirring vigorously with a wooden spoon, until the steamed dough starts to separate from the walls of the cookware.
Leave it to cool and start adding the eggs one by one, by beating well after each one.
Put the finished dough in a piping bag with a star-shaped tip and in a tray covered with baking paper, form the eclairs. Bake at 360°F (180°C) for about 30 minutes.
During this time, mix the two types of cream - butter and banana, by beating with a mixer.
Fill the eclairs with cream and decorate them as you like with powdered sugar or melted chocolate.
The eclairs with banana cream are great.
