How to make
The peppers and onions are finely chopped. Season with oil, salt and vinegar and mix well.
One slice of bread is spread evenly with hummus, the other slice of bread is spread with processed cheese. I used seasoned processed cheese.
Place 1-2 handfuls of arugula, 2-3 spoonfuls of the pepper-onion mixture and the sliced tomato on the slice of bread with the processed cheese.
It is lightly salted if you are a fan of savory foods and place the slice of bread with hummus on top.
