Ingredients

  • pasta - 1.1 lb (500 g) large (e.g. macaroni, tortiglioni, pappardelle)
  • salt - 2 pinches
  • olive oil - 1 - 2 tbsp.
  • Pasta Sauce
  • prosciutto - 6 - 8 long, thin slices
  • oyster mushroom - 3.5 oz (100 g)
  • onion - 1/2 onion
  • cooking cream - 1 lb (450 g)
  • grana padano - 3.5 oz (100 g)
  • olive oil - 4 - 5 tbsp.
  • salt - by taste
  • black pepper - 2 pinches

How to make

Very tasty and aromatic pasta with oyster mushrooms and prosciutto!

Start with the pasta sauce, by very finely chopping the onion and putting it to fry in olive oil (in a deep pan).

During this time, clean and finely chop the mushrooms and when the onion softens, put them in the fat with it.

Fry for 3 minutes and if you notice that the onion becomes a darker golden color, reduce the heat.

Cut the prosciutto into small pieces (set aside two slices for garnish when serving) and also add it into the pan to cook briefly, in order to release its aroma.

At the same time, put pasta to cook in plenty of water with a little salt and olive oil for the time indicated on the package.

Pour the cream, salt and black pepper over the onions, mushrooms and prosciutto and leave the sauce to simmer over low/moderate heat.

If you use a lighter and more liquid cream, you can thicken the sauce with two or three spoons of cream cheese - it turns out great.

Finely chop or grate half of the hard, aromatic Grana Padano cheese. Put it in the sauce and stir.

When the pasta is cooked, transfer it into the pan with the rich sauce with some of the water from the pasta.

Increase the heat to thicken the sauce faster and become creamy (the starch in the boiled water helps with this).

Serve the delicious pasta, by sprinkling it with the remaining grana padano in large flakes and large pieces of prosciutto.
