Ingredients

  • red peppers - 3.3 lb (1.5 kg)
  • eggplants - 2.6 lb (1.2 kg)
  • garlic - 5 cloves
  • sugar - 1 tbsp.
  • salt - 1 tbsp.
  • vinegar - 5 tbsp.
  • oil - 1/2 cup (120 ml)
  • hot peppers - 1 pc.

How to make

The peppers and eggplants are roasted, I personally do it on the grill.

Put them in a container with a lid or a plastic bag to steam and peel more easily.

Then peel them and place them in a colander, in order to drain.

Grind them in a blender into larger pieces.

Add the sugar, salt, vinegar and hot pepper (finely chopped) to them.

Finely chop the garlic and add it as well. Mix everything well.

Pour the oil into a deep pot and heat it up.

Transfer the grinded and seasoned vegetables and fry them for a few minutes on medium heat, by stirring frequently, since they may burn.

Serve the homemade ajvar well chilled, spread on a slice or homemade bread with a slice of white cheese.
