Bake the peppers and eggplants, which need to be in approximately equal quantities. Peel them and remove the stems and/or seeds.
Heat the oil in a large pan and fry the coarsely chopped onion until soft, and finally add the garlic cloves.
Blend all ingredients together and add the salt and vinegar to taste, according to your preferences.
Distribute the ajvar in jars, try to get all the air out. Close and store them in a cool area.
