How to make
Peel and dice the potatoes. Boil them, until they're fully cooked in salted water.
Liquidize the boiled potatoes. Add the finely grated carrots and crumble the white cheese.
Season the potato patty mixture with black pepper and salt, if needed.
Put the breadcrumbs in a bowl, add the chopped parsley, two pressed cloves of garlic and a pinch of salt.
Pour the olive oil and stir, until the mixture is well moistened.
Beat the egg. With moist hands, shape the vegetable patties.
Dip them first in the beaten egg, then in the prepared breadcrumbs.
Arrange the patties on a baking tray, lined with parchment paper.
Bake at 370°F (190°C) in a preheated oven, until they aquire an appetizing color. Serve the oven-baked potato and carrot patties with a salad of your choice.
