How to make
The yeast and sugar are dissolved in 4.4 fl oz (130 ml) of the water. Leave it for 15 minutes to activate.
The flour is sifted into a bowl and a well is made in the middle, into which the remaining water and milk are poured - slightly warmed. Add the yogurt, salt, oil and activated yeast.
Knead a soft, elastic and non-sticky dough, by sprinkling a little extra flour, until the desired result is obtained.
The dough is formed into a ball, greased and placed back into the bowl, by covering it with cling film. Leave it to rise for 1 hour.
Prepare a baking pan with a diameter of 80°F (28 cm), covered with baking paper. The dough is placed in it and stretched out with your fingers, until it covers the entire surface. It is pulled and pressed, until it becomes thicker at the edges.
The baking pan is placed back in a warm place, so that the pide can rise once more for about 40 minutes.
The oven is heated to 430°F (220°C). The bread is spread with a yolk beaten with a little milk and sprinkled with sesame seeds.
Bake for 30-35 minutes and then the temperature can be reduced to 370°F (190°C).
The finished Pide Bread is wrapped in a towel while it is warm and after it has cooled, it is served on the table.
