How to make
Crack the eggs into a large bowl, pour the sugar and beat with a mixer into a fluffy cream. In small portions, add the flour and a pinch of cinnamon, by stirring with a wooden spoon from the bottom to the top, so that the mixture does not lose its volume.
Generously grease a rectangular baking pan with butter. Pour the mixture, level it out and bake the revani at 370°F (190°C) in a preheated oven with a fan for about 20 minutes. Remove the finished revani and set it aside, until it cools completely.
For the syrup, pour the water into a saucepan and pour the sugar. Boil for 10 minutes. Remove it from the heat, pour in a cup of rum and 3 tbsp. of lemon juice. Syrup the cooled and cut into squares revani with the hot sugar syrup.
Garnish with candied cherries and fresh mint leaves.
