I made these improvised zucchini patties today.
Peel the zucchini, grate it, sprinkle with a little salt and leave it for 20 minutes. Drain it well, add the egg, breadcrumbs, oat bran or flour. I had two boiled potatoes left, I added them as well and seasoned with chopped dill.
Finally, add crumbled white cheese and grated yellow cheese. A thick mixture is obtained by mixing and if necessary, add another spoonful of flour or oat bran.
Shape 8 vegetable patties, place them onto baking paper, which has been greased with oil and pierced with the tip of a knife.
Bake for 20 minutes at 390°F (200°C) and turn them after 10 minutes and bake, until they aquire the desired color.
Delicious and easy meatless patties. They go great with yogurt and garlic!
