How to make
Clean the leeks and carrots. Boil them, until they soften and blend them.
Peel the tomatoes and finely chop them. Fry them in a little, fat until the liquid evaporates and then add finely chopped garlic.
Remove them from the heat and add the blended carrots and onions. Add as much salt as you like and stir. Transfer the tomato sauce into a baking pan.
Cut the zucchini into slices, but they should not be too thin. If the zucchini are very long, cut them in half. Cook them in a greased grill pan or grill.
Add salt to the grilled zucchini. On a tray, make piles of three grilled zucchini slices, with ham and grated mozzarella in between.
In a bowl, mix the breadcrumbs with the parmesan. Roll each resulting pile and arrange them on top of the tomato sauce.
Bake in a preheated oven at 390°F (200°C), until they aquire a golden color.
Take them out and sprinkle the oven roasted zucchini with grated mozzarella.
Place them back into the oven, until the mozzarella is browned.
Sprinkle with parsley or basil.
The oven roasted zucchini with mozzarella and ham are very tasty!
