Ingredients

  • halloumi - 8.1 oz (230 g)
  • lemons - 1 pc.
  • olive oil - 4 tbsp.
  • walnuts - 1.8 oz (50 g)
  • baby spinach - 1.4 oz (40 g)
  • cherry tomatoes - 6 - 7 pcs.
  • chili - crushed dried peppers (optional)
  • mint - 4 - 5 fresh leaves

How to make

Cut the cheese into slices, which are a little less than a centimeter thick. If you love spicy food, rub each piece with crushed chili pepper. You can also choose Halloumi cheese, which already contains chili inside.

Prepare a wide plate, in which you will serve it and arrange the baby spinach and cherry tomatoes in a cricle. Sprinkle with a little salt, drizzle them with olive oil and some lemon juice.

Heat a non-stick pan or grill pan over high heat, by smearing the bottom with one or two teaspoons of olive oil.

Bake the pieces of halloumi on both sides, until your they aquire the color you like, remove them and arrange them in the center of the prepared plate.

In the same pan, roast the walnuts briefly and place them on top of the cheese and sprinkle them with a little of the lemon peel, grated on a fine grater for citrus.

Finally, add the mint leaves - whole or shredded and season with as much lemon juice as you like.

Serve the dish while the cheese is warm with a glass of quality wine.
