How to make
Peel the nectarines, cut them in half and remove their seed. Cut them into thin slices and sprinkle them with brown sugar and liqueur.
Stir and leave the fruit for 30 minutes. If they are very ripe and soft, reduce the time to 10-15 minutes.
Blend the white sugar with the lemon peel in a blender or coffee grinder.
Add the soft butter and beat with a mixer, until a creamy mixture is obtained.
Add the eggs one by one, while beating constantly and continue with the addition of yogurt and the strained nectarine liquid (1/2 cup of it).
Pour the flour along with the baking powder (sifted) into the liquid mixture.
Add the chocolate pieces and 3.5 oz (100 g) of nectarines.
Mix well and pour it into a greased baking pan with a diameter of 10″ (26 cm). It can also be covered with baking paper.
Arrange the remaining nectarines on top and put the juicy fruit cake in an oven preheated to 320°F (160°C).
Bake the fruit cake for 45 minutes or until it is fully baked.
Leave it to cool slightly before removing it from the baking pan and sprinkle it with powdered sugar (optional)
Serve this gorgeous nectarine cake with a cup of coffee and enjoy it in the company of good friends.
