Ingredients

  • biscuits - 3 plain packs (about 12.5 oz (350 g))
  • butter - 1/2 cup (125 g)
  • brown sugar - 2/3 cup
  • mint - 1 handful of leaves
  • for the cheese mix
  • cream cheese - 1 1/2 cups (370 g) (3 packs)
  • cottage cheese - 1 1/5 cups (300 g)
  • liquid cream - 6 tablespoons
  • powdered sugar - 2 - 3 tablespoons
  • vanilla - 1 ampoule
  • limes - zest and juice of 1 lime
  • rum - 2 - 3 tablespoon, white

How to make

Grind biscuits into crumbs in a food processor. Add the butter in pieces, 2-3 tablespoons of brown sugar and mint leaves. Blend it all again until homogeneous. Spread the resulting mixture into a suitable tray in a thin crust, squeezing and shaping it with your hands.

For the cream, whisk the cream cheese with the liquid cream, cottage cheese, powdered sugar and the remaining amount of brown sugar well. If you the mixture ends up too thick, you can add a little cream or milk. Add vanilla, rum, the juice and zest of the lime and beat well again.

Pour the mixture over the layer, smooth it out and store in the fridge for 5-6 hours before serving. Decorate as desired.
