How to make
Peel and cut the zucchini into medium sized chunks. Dice the remaining vegetables finely.
Saute the onion, carrot and pepper in a hot pan with a drizzle of olive oil. Add the zucchini and sortly after that the paprika. Stir until the veggies obtain a slightly red hue.
Add the diced tomato and the washed bulgur and stir again. Season with salt. Pour in just enough water to cover all the ingredients.
Bring to a boil, reduce the heat and simmer. Stir occasionally to avoid the bulgur from sticking.
Once cooked, add finely chopped dill.
Your Quick Bulgur with Zucchini is ready.
