"Cheesecake with cherry jam, which were going to treat the guests with! There is some left for you too"

Ingredients

  • for the base
  • cocoa biscuits - 14 oz (400 g)
  • soft butter - 4.4 oz (125 g)
  • for the cake layer
  • mascarpone - 1.1 lb (500 g)
  • condensed milk - 1 cup (200 ml) (boiled and sweetened)
  • confectionery cream - 7 oz (200 g)
  • gelatin - 1 packet (10 g - Dr. Oetker)
  • liquid vanilla - 1 tsp.

  • fresh mint leaves

How to make

Grind the biscuits and mix them with the soft butter. Pour the mixture into a ring form and shape the base by pressing it down with a spoon or the bottom of a cup.

Refrigerate it while preparing the cake layer.

Whip the cold confectionery cream until it turns into a thick cream. Beat the mascarpone, by gradually adding the boiled condensed milk to it.

Mix the two mixtures and mix until a homogeneous mixture is obtained and add the vanilla.

Prepare gelatin according to the instructions on the package and add it to the cream.

Pour the mixture over the base and flatten out the delicious cheesecake. Refrigerate it for at least 4 hours.

Make cherry jam. I used the Dr. Oetker fix (3: 1)

Just before serving, pour the freshly prepared cherry jam over the cheesecake and garnish it with fresh mint leaves.
