How to make

This unique cheesecake is found in the Turkish cuisine in Spain. The recipe originated in the city of San Sebastian and is also known as hot cheesecake and baked cheesecake.

Although it does not have Turkish roots, this cheesecake is made by Turkish people and they prepare it with pleasure for their relatives and guests.

You can also enjoy it in Turkish pastry shops. Its taste is very pleasant and the texture is airy.

TIPS: You can add lemon or orange peel to the cheesecake mixture.

All ingredients used should be at room temperature - eggs, cream and cream cheese.

If you want the cake to be sweeter, use a cup and a half of sugar.

For lower calories, you can use fat free cottage cheese instead of cheese.

PREPARATION:

Mix the cream cheese and sugar in a large bowl. Beat the mixture for 5-6 minutes with a mixer, until the two ingredients are completely homogenous.

Continue to beat and add the eggs one by one, that you have previously taken out of the refrigerator and are at room temperature.

Add one egg, beat, add the second egg and beat, etc. Add the cream and beat. Add the vanilla.

Add the flour and beat well until a smooth mixture is obtained.

Cover a medium-sized cake tin (20 cm - for a higher effect, and can also be 22/24 cm) with baking paper, by leaving the edges sticking out of the tin.

Grease all of the paper and pour the mixture into it. Shake the cake tin to distribute the mixture evenly and to make the air bubbles disappear.

Preheat the oven to 370°F (190 degrees) and put the cheesecake in it to bake.

Bake it for 45-55 minutes depending on the strength of your oven (until it aquires a brown crust).

When baked, the cheesecake will rise, but then it will flatten.

Turn off the oven and let the cheesecake rest inside for another 45-50 minutes, by leaving the oven door half open.

Then remove it from the oven and cool it to room temperature. You can also consume it at this stage.

But it is desirable after cooling it to room temperature, to store it for several hours, to set and cool in the refrigerator.

Remove it from the cake tin, remove the baking paper and decorate the top with blueberries, raspberries or blackberries.

You can also use a fruit or chocolate topping.

Cut it into pieces and serve it.
