How to make
Oven - 390°F (200 degrees).
Two flat trays covered with baking paper.
Peel the potatoes and cut them into slices (about 0.6 cm thick). Arrange them on top of each other and cut them into 6 mm thick sticks. Place them in a deep bowl.
Sprinkle them with cornstarch, garlic powder, dried basil, cumin, salt, pepper, cayenne pepper and finely grated Parmesan. Add the melted butter and stir by hand until the spices stick well to the cracker sticks.
Distribute each potato individually in the baking tray.
Bake them at 390°F (200 degrees) for about 20/25 minutes. If both trays are placed at the same time, after 15 minutes their places are changed, so they will be prepared evenly.
Take them out, sprinkle them with a little more grated Parmesan cheese and serve them with a sauce of mixed sour cream, garlic powder, mustard and a little chili for a spicier taste.
Sweet potatoes are good both fried and baked. I offer an easy and quick recipe, which is also healthier, because they are baked. One of the most important steps to make them crispy is to cut them thinly into the specified millimeters, because if they are thicker, they will not become crispy like crackers.
Also, the use of cornstarch helps in the making of these delicious potato cracker sticks, as the starch absorbs their moisture and makes them have a nice crispy crust, while their inside remains soft and tender.
