How to make
Beat the eggs, flour, baking powder, oil, vanilla and sugar with a mixer in a suitable bowl. A thick and sticky mixture should be obtained. Cut the Turkish delight cubes into smaller ones.
Using a brush, smear a filo pastry sheet with the mixture, while being careful not to tear it. Put a second sheet on top and arrange the Turkish delight cubes on the short side. Roll it up. The same is repeated until you run out of filo pastry sheets. Then arrange them in a greased pan.
Bake the pastries in a preheated oven at 360°F (180 degrees) for 25-30 minutes or until they aquire a nice golden tan. Allow them to cool completely and make the syrup during this time. Put the water and sugar in a saucepan to boil.
Then add the vanilla. Pour the hot syrup over the well-cooled Turkish delight filo pastries and sprinkle them with coconut shavings.
Allow the baked filo pastries to soak up the syrup well for about 3-4 hours.
