Chop the leeks and fry them in the fat and you can add more oil if you think it's necessary. Add the peppers and fry with them.
Meanwhile, chop the tomatoes and add them in the pot. Cook them until they start boiling and the sauce is slightly reduced. Sprinkle the stew with spices and you can optionally add chopped parsley.
Serve the stew with white cheese.
