Cut the bacon into thin slices and cover the bottom of the pot with some of it. Begin to arrange a layer of sauerkraut, then meat, rice, pickled beetroots, and continue until you finish off with sauerkraut on top. Place an entire sauerkraut leaf on top and cover with the remaining bacon.
Pour in white wine and plenty of oil. Cover the mouth of the pot with a piece of paper and put the lid on. Put the kapama pot in a hot oven. Once you hear it beginning to cook, turn down the heat and continue cooking for 4-5 hours.
