How to make
Chop the onion finely. Shred the carrot and dice the potatoes.
Heat the butter in a pot and saute the vegetables. Season with salt and black pepper. Pour in the vegetable broth, or hot water, reduce the heat to moderate and cook for 15-20 minutes.
Once the vegetables are cooked add the spinach and cook for 5 more minutes, until the spinach is blanched.
Remove from the stove and blend to a smooth consistency. Add the cooking cream and grated blue cheese.
Stir and serve the spinach soup by adding a spoon of sour cream in each plate.
